NIKO ROMITO PANDORO FOR VERONESI FOUNDATION

The first Niko Romito Pandoro is the fluffy novelty for Christmas 2023.
Same Chef's gastronomic approach to great leavened goods: fluffiness, meltiness, creaminess, high hydration and moisture. Inspired by the classic recipe, we apply the philosophy of long leavening and fermentation from organic sourdough starter to the processing of Pandoro. Rich dough requires great balance and meticulous precision in dough management.

Organic flours, eggs and yolk, butter made from fresh milk cream, selected organic cocoa butter from cocoa plantations in Peru, citrus honey and organic Bourbon vanilla, which is used integrally. In fact, we make a preparation in which the whole pod is infused and not just the pulp, so that the sweet, floral and fruity fragrances of the ingredient are fully extracted.

Designed as a limited edition for the 2023 holidays in support of the Veronesi Foundation, the Niko Romito Pandoro contributes to pediatric cancer research with the PALM Research Project - Pediatric Acute Leukaemia of Myeloid origin - an international network for the study and development of new therapies for pediatric acute myeloid leukemia.

The initiative grew out of the friendship between Chef Niko Romito and Francesca Ruffini Stoppani, Head of the Como Delegation of Fondazione Veronesi, which has been strongly committed to supporting pediatric oncology research excellence since 2014.

The Pandoro, produced in a limited edition, is packaged in exclusive silk and brocade shopping bags specially made by Francesca Ruffini Stoppani's For Restless Sleepers brand, and placed inside the iconic white box Laboratorio Niko Romito for Fondazione Veronesi.
Forty percent of the proceeds from the sale of the Pandoro will go to fund Fondazione Veronesi's project.
