NIKO ROMITO PANDORO FOR VERONESI FOUNDATION
The first Niko Romito Pandoro is the fluffy novelty for Christmas 2023.
Same Chef's gastronomic approach to great leavened goods: fluffiness, meltiness, creaminess, high hydration and moisture. Inspired by the classic recipe, we apply the philosophy of long leavening and fermentation from organic sourdough starter to the processing of Pandoro. Rich dough requires great balance and meticulous precision in dough management.
Organic flours, eggs and yolk, butter made from fresh milk cream, selected organic cocoa butter from cocoa plantations in Peru, citrus honey and organic Bourbon vanilla, which is used integrally. In fact, we make a preparation in which the whole pod is infused and not just the pulp, so that the sweet, floral and fruity fragrances of the ingredient are fully extracted.
